Traditional lever machine

With the Strega S, Bezzera has developed a hand lever machine that delivers amazingly consistent results. Unlike machines with a conventional brewing group, the pressure required to extract the espresso in this model comes from a built-in spring. By pulling the lever down forcefully, a pressure of around 8 kg is built up, which is reduced linearly when released. The pre-infusion takes place when the lever is pressed down and should not be released until the first drop of espresso is released. During this time, the vibration pump provides the pre-infusion, and the integrated suspension takes over the rest when you release it.

The Strega S portafilter machine combines traditional espresso art with modern, contemporary features. The housing and the hand lever are extremely solidly made. Inside is a copper boiler with a generous 2 l volume, which is equipped with a pressure switch for greater temperature stability. The pressure of the boiler can be read from the outside using a pressure gauge. Both the steam lance and the hot water aerator are equipped with ball joints to enable comfortable operation. These are operated using the two tilt valves. The Strega S draws fresh water for operation from the built-in 4 l water tank.
